Our Story

Rooted in the Land

Core, A Sonoran Grill, takes its name from what lies beneath: the bedrock of the desert, the wild heart of the Tortolita Mountains, and the honest simplicity of good food cooked over fire. Rooted in a distinct sense of place, Core brings the character of the Sonoran Desert to the table through thoughtful cooking, regional sourcing and a renewed connection between the menu and the land that surrounds it.

Raised by Locals

Our Steaks

Our chefs searched close to home for beef with a story as genuine as its flavor. They found it in Dr. Samuel Garcia, founder of Lomo Premium Meats, a lifelong rancher whose family raises cattle in the desert ranchlands of Sonora and whose path led him to earn a Ph.D. in Animal Sciences from the University of Arizona. Dr. Sam Garcia’s rare combination of ranching tradition and scientific understanding made the connection feel instinctive. For Core, A Sonoran Grill, exceptional beef begins long before it meets the fire. It begins with knowing the land, respecting the animal and trusting the hands behind it.

Produce, Grains and Seafood

Produce connects our kitchen to Southern Arizona's small farms and seasonal harvests; Hook to Fork brings generations of seafood knowledge and responsibly sourced catches, while heritage grains from Hayden Flour Mills are revived and stone-milled in the Arizona desert, reconnecting us with flavors nearly lost to time.

Growers. Fishermen. Millers. They aren't simply our purveyors. They are part of the story we're here to tell.

Joyful Discovery

Behind the Design

Core's design and art draws from the raw beauty of the Sonoran Desert, where natural textures, earthy tones and warmth meets a sense of openness and ease. Rugged yet considered, the space favors the elemental over the ornate, allowing the shifting desert light and landscape beyond to become part of the experience.

Subtle details reveal themselves slowly, from colors inspired by monsoon skies, desert sand, patina green, blooming saguaro, canyon red and aged copper to markings and textures that echo weathered rock, erosion and traces left on the land over time. The result feels grounded rather than formal, beautifully undone and unmistakably of the Sonoran Desert. Design led by House of Form in Phoenix, Arizona.
